When Martha Argüello decided to open her restaurant, she knew it had to be Spanish. “I was born in Nicaragua, grew up in San Francisco, and I have lived in Mexico, but my grandparents are from Spain,” she said. Argüello said she has always loved to cook and had thought many times of opening a restaurant, but said she got sidetracked and ran an import and export business in Mexico for a while before returning to San Francisco.

It's early Saturday morning at Fort Mason, and 20 people are assembling in the large old military classroom, each wearing a resigned and glum expression as they plop themselves down on the hard plastic chairs and nervously wait for class to begin. On the chalkboard up front a stern reminder is written in large letters: Nobody Admitted after 9AM Sharp!
